Recipe: Making Lower-Calorie Kids Spring Treats Without Sacrificing Taste

This is a sponsored post written by me on behalf of Whole Earth Sweetener Co. for IZEA. All opinions are 100% mine.

The start of spring means longer days, warmer weather, and more time for kids to play outdoors. It also means planning meals and treats to keep the kids happy during spring break.

I work hard to ensure that our home maintains a healthy eating lifestyle. And with my oldest son having Crohn’s disease and Celiac disease, we also have a totally gluten-free diet.

Nevertheless, at the end of the day, kids are kids. I cannot deny the fact that they still love to indulge in sweet eats and tasty treats.

Finding the perfect balance between satisfying their cravings and minimizing sugar consumption and calories used to be a challenge for me. That has changed since I have discovered Whole Earth Sweetener Co.

What Whole Earth Sweetener did is rethink how to source and use the highest quality ingredients. They offer unique, lower calorie blends that cannot be found find anywhere else.

I love that I can use a lesser amount of Whole Earth Sweetener products and still get the same sweetness and flavor. Their products are also very easy to use.

For example, when using their Baking Blend, I just swap 1 cup of sugar for ½ cup of it for the same amount of sweetness as traditional sugar per serving – with 50% fewer calories.

Whole Earth Sweetener products are great tasting, zero and lower calorie sweeteners crafted and blended from Non-GMO ingredients. That means I can use their wide range of products for everything from my morning cup of coffee to baking special treats for my kids completely worry-free.

Speaking of kids’ special treats, here’s one of their favorites that I make each year to celebrate the beginning of spring:

Kids Spring Treats: Gluten Free Honey Almond Spring Nest Cookies

1 ½ cups gluten free flour

1 tsp. baking powder

1 ½ sticks unsalted butter

2 ½ cups pastel miniature marshmallows

¼ cp. Whole Earth Sweetener Baking Blend

1 egg white

1 tsp. vanilla extract

½ tsp. almond extract

¼ tsp. Whole Earth Sweetener Honey 50

3 cups coconut flakes

Pastel ‘egg’ themed miniature jelly beans

Pastel M&M’s

Coconut Coloring

Food coloring (green, blue, purple)

1/8 tsp. Whole Earth Sweetener Honey 50

Heat oven to 375 degrees. In a medium-size bowl combine flour, salt, and baking powder. Place butter and 2 cups of the marshmallows in a microwave-safe dish and microwave for 3 minutes. Next, in a larger bowl, combine Whole Earth Sweetener Baking Blend, egg white, vanilla, almond, and Whole Earth Sweetener Honey 50. Add marshmallow mixture, and beat with blender on low setting until mixture forms a dough.

Note: Whole Earth Sweetener Baking Blend has 50% less sugar and calories than traditional sugar per serving, and is Non-GMO Project Verified.

Pour coconut flakes into a third bowl. Spread wax paper, and shape small-medium handfuls of dough into balls, adding coconut (to liking) to blend. Use a spoon to add circular indenture into the center, then place onto ungreased cookie sheet.

Bake 9-10 minutes. Remove from oven and allow to cool for additional 10 minutes. While cookies are cooling, use miniature dishes to make food colorings. Place coconut into each dish, allow to sit for 10-30 seconds. Drain coconut with a small strainer, then place coconut back into the dish.

Once cookies are cool, decorate tops with colored coconut. Last, place remaining marshmallows, jelly beans, and M&M’s in the center of each cookie.

In addition to using Whole Earth Sweetener Baking Blend and Honey 50, I use their Nature Sweet® 0 calorie sweetener packets whenever I drink coffee or tea, both at home and while on the go.
