The start of spring means longer days, warmer weather, and more time for kids to play outdoors. It also means planning meals and treats to keep the kids happy during spring break.

Speaking of kids’ special treats, here’s one of their favorites that I make each year to celebrate the beginning of spring:
Kids Spring Treats: Gluten Free Honey Almond Spring Nest Cookies
1 ½ cups gluten free flour
1 tsp. baking powder
1 ½ sticks unsalted butter
2 ½ cups pastel miniature marshmallows
¼ cp. Whole Earth Sweetener Baking Blend
1 egg white
1 tsp. vanilla extract
½ tsp. almond extract
¼ tsp. Whole Earth Sweetener Honey 50
3 cups coconut flakes
Pastel ‘egg’ themed miniature jelly beans
Food coloring (green, blue, purple)
1/8 tsp. Whole Earth Sweetener Honey 50
Heat oven to 375 degrees. In a medium-size bowl combine flour, salt, and baking powder. Place butter and 2 cups of the marshmallows in a microwave-safe dish and microwave for 3 minutes. Next, in a larger bowl, combine Whole Earth Sweetener Baking Blend, egg white, vanilla, almond, and Whole Earth Sweetener Honey 50. Add marshmallow mixture, and beat with blender on low setting until mixture forms a dough.

Pour coconut flakes into a third bowl. Spread wax paper, and shape small-medium handfuls of dough into balls, adding coconut (to liking) to blend. Use a spoon to add circular indenture into the center, then place onto ungreased cookie sheet.
Bake 9-10 minutes. Remove from oven and allow to cool for additional 10 minutes. While cookies are cooling, use miniature dishes to make food colorings. Place coconut into each dish, allow to sit for 10-30 seconds. Drain coconut with a small strainer, then place coconut back into the dish.
Once cookies are cool, decorate tops with colored coconut. Last, place remaining marshmallows, jelly beans, and M&M’s in the center of each cookie.
