Making the change to a totally gluten free household due to my oldest son being diagnosed with Crohn’s disease with Celiac intolerance has been quite challenging. However, it has also been quite rewarding. It was not easy at first, but as I have become more knowledgeable about his medical condition and the diet and nutrition changes he must make in order to manage his health, I am glad to say that I am improving in not only finding foods that are gluten free, but also creating meals that he can be comfortable with eating and are as close to are ‘traditional’ meals as possible.
His diet and nutrition ritual also requires that he eats his dinner at certain times, which means that the meals that I prepare have to be fast very little amount of fuss and hassle. On days when I am pressed for time to get a healthy, gluten free dinner on the table, I can always count on Success®Rice to make it happen. Gluten Free Garlic Sausage and Rice
- 1 bag Success® Whole Grain Brown Rice
- 1 pound gluten free breakfast sausage
- 1-2 tablespoons minced garlic
- 1 teaspoon pepper
- 1 can gluten free diced tomatoes
In a large nonstick skillet on the stove, cook breakfast sausage and garlic on medium-high heat until well-done (7-10 minutes).
Reduce heat. Add pepper and diced tomatoes (juice included). Stir over low flame until all tomatoes are softened and creates a slight sauce (5-7 minutes).
Meanwhile, cook Success® Whole Grain Brown Rice according to package directions (either on the stove or microwave – your preference).
Remove rice from heat and drain bag according to package directions. Empty remaining water out of the pot, then spoon rice into empty pot. Fluff with fork.
Remove sausage mixture from heat. Cover with top and let stand 2-3 minutes.
To serve, place scoop of rice onto plate (or bowl), then top with sausage mixture.
Keep warm. Serve with green beans or other vegetable of choice.
*Note: for extra pizzazz, stuff inside of baked artichokes, tomatoes, or peppers.
