Mini Breakfast Pizza

What you’ll need:

 

4 eggs, beaten

1/3 cup pizza sauce

2 English muffins, split, toasted

½ cup shredded Italian cheese blend (2 oz.)

Dried oregano leaves

Heat your toaster oven to 450 degrees F. Coat a large nonstick skillet with cooking spray; heat over medium heat until hot.  Pour in the eggs, as the eggs begin to settle, gently pull them across the pan with an inverted turner, forming large soft curds  Continue cooking and pulling until they thicken and no visible liquid egg remains.  Remove from the heat.  Spread pizza sauce evenly on muffin halves.  Place them on the baking sheet.  Top with eggs and cheese, dividing evenly.

 

Bake in your toaster oven at 450 degrees F. until the cheese is melted.  About one or two minutes.

Maple Glazed Sausages and Figs

What you’ll need:

 

2 tablespoon(s) maple syrup

2 tablespoon(s) balsamic vinegar

2 package(s) (12 ounces each) fully cooked chicken and roasted garlic sausages

8 ripe fresh figs, each cut lengthwise in half

1/2 large sweet onion, chopped

1 1/2 pound(s) Swiss chard, stems sliced and leaves chopped

2 teaspoon(s) olive oil

Salt and pepper

Preheat your toaster oven to 450 degrees F. In a small bowl, stir syrup and 1 tablespoon vinegar until blended. Place sausages and figs in single layer on foil-lined toaster oven tray, and lightly brush with half of syrup mixture. Roast 8 to 10 minutes or until heated through and golden, turning over and brushing with remaining syrup mixture halfway through roasting. Meanwhile, place onion in microwave-safe large bowl. Cover with vented plastic wrap and microwave on High 3 minutes. Add chard to onion;  cover and microwave 9 minutes or until vegetables are tender, stirring once. Stir in oil, 1/4 teaspoon salt, 1/4 teaspoon freshly ground black pepper, and remaining 1 tablespoon vinegar. Serve chard with figs and sausages.

Greek Frittata

What you’ll need:

 

3 tablespoons olive oil

10 large eggs

2 teaspoons kosher salt

1/2 teaspoon black pepper

1 5-ounce bag baby spinach

1 pint grape tomatoes, halved

4 scallions (white and green parts), thinly sliced

8 ounces Feta, crumbled

Heat the toaster oven to 350 degrees F.  Add the oil to a 2-quart casserole and transfer to the oven for about five minutes.  While this is heating, in a bowl whisk together the eggs, salt and pepper.  Add the spinach, tomatoes and scallions and combine.  Gently stir in the Feta.  Remove the casserole from the oven. Pour the egg mixture into the casserole.  Bake until the frittata is browned around the edges and slightly puffed.  It is done when a knife comes out clean.  About 25 to 30 minutes.

“Hard-Boiled” Eggs

 

Skip the pot of boiling water and try making your “hard-boiled” eggs in the toaster oven.

You can make the perfect hard-boiled egg in your toaster oven.  Preheat it to 325 degrees F.  Put three to five eggs directly on the toaster oven rack (parallel to the rack so they won’t roll out).  Bake for approximately 30 minutes.

After 30 minutes take them out and immediately immerse them in ice water.  Leave them to soak until they are cold, about 15 minutes.

The eggs will be easy to peel.  You may see some scorch marks, but that won’t affect the taste.

We don’t have a toaster oven, but I suppose these recipes could be made in a traditional oven as well. I want to try the Greek Frittata!
